drying herbs?

Yesterday I had a go at my herbs and spices, sorted them out, refilled pots and made a note of the ones I needed to replace. Sage and Rosemary in particular.
It then occurred to me that as I have those two growing in my garden I must be mad to buy them. So today I am having a go at drying them but not sure if I am doing right. I have made them into bunches and hung them up in the sun, like you see the Turks drying chillies.
Any suggestions (helpful) would be gratefully accepted.

If anyone wants to do me a swap for one and you're in the Didim area, most welcome.

We have just bought a new house in the UK and have 2 fig trees in the garden, apart from eating them as they are and I thought perhaps bake them with some honey and serve with Greek yougurt, any one have any suggestions.

We also have apple trees, pear tree, blackberry, gooseberry, raspberry bushes, rhubarb and runner beans, I was baking all day yesterday and now have a freezer full of tarts and crumbles and fresh beans for Sunday Lunch.

There are also 2 grape vines which have dozens of small bunches of grapes, I dont know if they will swell and become edible, does anyone have any experience of grape vines.

Help! before now all I have grown are herbs, pots and hanging baskets.

I have a large apple tree at the bottom of the garden and its full of cooking apples. I've made apple pies, apple strudel, apple crumbles for the freezer and apple and cider sauce in jars for pork.
Next door has 2 large apple trees too (and his family stopped eating them in 2005 as they were sick of them!). so i get his apples too.
Do any members have suggestions for how i can cook these or preserve them for over the winter months? A friend suggested chutney but i dont have a recipe and how long would it keep?
Any apple recipes greatly appreciated and anyone in Nottingham thats local your very welcome to come and grab a few bags!

Over the last few days whilst out walking, the hedges this year are absolutely loaded with Blackberries, I've never seen so many, maybe it's this long wet summer we've had, so there is some use if it is.

My query is, I am going to go a picking tomorrow and apart from pies/crumbles, I'd like to make a nice jam preserve, anyone any tips or other recipes to make. Would they work for Gin, like could I do a Blackberry Gin, I've done Sloe and Damson in the past, in fact got some Damson left from last years crop, just thought about Blackberry Gin.

I love them but at the moment keep bringing a handful home, washing them and just enjoying them, they're lovely and sweet too.
