Sweet 'n' Sour Sauce

Sweet 'n' Sour Sauce

- 1 cup chicken stock
- 1\2 cup syrup from canned pineapple
- 1\3 cup vinegar (the grape vinegar in Turkey fine)
- 1\3 cup sugar
- 1 tbsp. cornflour
- 1 tbsp. light soy sauce (only seen dark soy in Turkey but it's fine)
- 1\4 cup ketchup
- 1\4 tsp. salt
- black pepper
- pinch ginger powder (optional)
- pinch of chilli powder (optional for spicy food lovers)

- VEGETABLES (optional)
- 4-5 pineapple rings
- 2 spring onions finely chopped (optional)
- 1 carrot chopped into slivers like twiglets
- 2 green bell peppers chopped chunky
- 1 small white onion chopped chunky
- oil for deep frying

This sauce is quick and easy to make. İt's dark and not orangey red like some take_away stuff but that's a good thing as NO colouring in this!

Just pop dry ingredients in a pan, stir in wet ingredients and bring to the boil stirring. Cook for a couple of minutes, taste and adjust i.e. İ like my sauce more sweet than sour so İ always add a bit more sugar and just stir in to dissolve.

Meanwhile heat up oil very hot in a wok or suitable pan, toss in the prepared veg, fry 3 mins then add to sauce along with pineapple chunks.

Serve with prawn crackers (Metro but PİNK), chunky chips, egg noodles (Metro and Kipa), boiled or fried rice and your favourite meat or seafood battered (just a flour and egg seasoned does nicely).

Don't worry about size of the cup. İf you are just making it for one you could use a cay glass but İ use a standard teacup and there is enough sauce for 4.
