Spicing up my Chicken?

You can all see who does the cooking in this house!

Chicken - gonna have a bar-b-que tonight and wanna give it a bit of oomph. Anyone got a secret recipe for making that flavour really stand out? Dont mind if its hot or spicy.

Bear in mind that I probably dont have all the ingredients you lucky people have in the UK, so whats cooking?

Merv, don't know if you can get all of the ingridients for this ..
Chilli rub ..rub on the chicken about 1 hour before you cook it

1 tbs ground black pepper 2 tbs cayenne pepper 2 tbs chili powder 2 tbs ground cumin 2 tbs brown sugar 1 tbs ground oregano 4 tbs paprika 2 tbs salt 1 tbs granulated sugar 1 tbs white pepper Mix all ingredients in small bowl.

heres another 2 without the bite

4 tsp. fresh lime juice
1/4 cup vegetable oil
2 medium cloves minced garlic
1/2 tsp. ground cumin
a few dashes cayenne powder


This makes enough for about 4 to 6 chicken breasts.

Place all ingredients in bowl, add chicken breast and marinate for 20 minutes. Meanwhile start your grill.

Honey, Lime and Ginger Glaze


2 inch piece fresh ginger root
6 tbsp clear honey
2 tbsp dry sherry or white wine
coarsley grated zest and juice of 1 lime
Salt and ground black pepper


Cut the ginger in half. Finely grate one piece, collect it into a ball and squeeze out juice in a bowl. Cut the rest of the ginger into small strips and stir it into the ginger juice with the rest of the ingredients.

Pour the mixture into a small pan and leave to simmer vigorously for 3 mins. until reduced by half. Leave to cool until thick and syrupy. Brush over chicken 10 mins before the end of cooking time.

My chicken marinade is quite simple, here is the recipe from what I can remember;

(Adjust quantities to suite)

Plenty of fresh garlic
Lemon juice
Salt
Hot Chillies (I like Jamaican chillies, Scotch Bonnets I think keep them in the freezer)
Saffron
Small amount of mixed herbs
Little soya sauce
Little sugar
Little olive oil
Small shallot or spring onion
For some exotic taste add some dried pomegranate seeds (or concentrated juice)

Blend the lot until smooth, marinade for a few hours and enjoy []

This is my own blend, and it changes depending on what I have handy and what kind of mood I'm in

Not a marinade, but tarragon /chicken stock/crushed garlic cloves/pinch of dill....cook slowly until chicken tender. Add cream and cracked black pepper.

half pint tom sauce, 1oz butter, 3 tbsp vineger,1/4 tsp chilli powder,(more if you dare) 1 tsp brown suger, half tsp celery salt, half tsp mixed herbs dried or fresh,put everything into a saucepan and bring to the slowly bring to the boil ,stir frequently until boiled then simmer for 15 minutes . bon appertite
