Orange and Honey Chicken.

There are some great local ingredients to be had around here. Looking around the kitchen I noticed that the chicken breasts from the supermarket are plump and tender and lean; that the honey from the local market is fresh in the comb and has a real quality of taste about it; and that the oranges from the roadside stalls beside the orange groves are just fantastic, lovely and sweet and juicy. So I decided to combine them into a simple flavoursome dish.

I did not bung whatever was in the kitchen together in a hurry because it was our wedding anniversary and I needed to make something that sounded good. Oh no.

It was our third anniversary, thanks for asking. Three years and not a single, angry word. Loads of furious sentences and plenty of incandescent paragraphs, but no single words. I would like to thank the department of paleo-jokeology for dating that gag to the early Lesdawsonian era.

I put three tablespoons of honey into an oven proof dish and then added the juice of three large oranges. I then made a half hearted attempt to mix the honey into the juice. Honey is sticky and does not want to mix in cold orange juice. Fact. Then I went and got the chicken breasts and just before I put them in I thought Iíd give it another go and really went at the marinade stirring it vigorously with a spoon. Not that it made much difference but I felt Iíd tried.

I used five chicken breasts because thatís what comes in the pack. But I would have chosen to use five anyway as that what fits nicely in the dish. Honest, I would. Plus it adds up to two for me, one and a half for the wife, one for my six year old daughter and half for the cat. We are not pampering the cat, by the way. Cat food is so expensive around here we have decided its cheaper if she eats what we eat. Which is fine by the cat on days when we have Orange and Honey Chicken but not quite so fine when we have stir fried vegetables.

Anyway I put in five chicken breasts and sloshed them around in the marinade. I then left them for an hour, turning them over after half an hour.

The chicken breasts, marinade and dish then all went into the oven which was preheated to about 180 degrees. Which is some other figure in Fahrenheit. Something to do with 32 and 19. You can borrow my calculator if you are that bothered.

They stayed in there about an hour. I turned them quite frequently because I was bored and hungry and wanted them to hurry up but I donít think this was vital.

When they were cooked I poured the juice into a saucepan and boiled it whilst stirring it a lot until it reduced into a thickish sauce which I the poured on the chicken as I served it.

You know what? It was very, very nice.

Thanks Joe, I enjoy reading your recipes, I've got some honey from our last visit to Turkey, eat loads of it and bring quite a bit back, not sure the oranges will be as tasty as in Turkey, but will give it a whirl.

Joe,

If every chief made a recipe sounds as interesting as you do I would look at recipes more often. Instead I throw whatever I have together and hope for the best.

Enjoyed reading yours so much & laughed so much, my husband wanted to know what was going on! Keep posting.
