Halal meat pies

Halal meat pies

Ingredients for pastry
450g/1lb flour
1 tsp salt
200g/7oz butter or margarine
225ml/7½oz milk and water mixed in equal proportions
Method
1. Warm a mixing bowl and sift in the flour and salt. Make a well in the centre.
2. Heat the fat in the milk and water in a saucepan over a medium heat until just boiling. Pour into the well in the flour and stir quickly with a wooden spoon until thick.
3. Continue working by hand to form a smooth dough, allow to cool and chill for a couple of hours.
For the filling.
500g beef mince [or dana / kuzu mix]
Tbsp. of tomato paste
½ a beef stock cube grated
Good pinch of salt
Tsp. of mixed herbs
Loadsa white pepper
65 grams home-made rusk
Mix with hands till well combined the roll into balls! Approx. 45grams in weight [about 13 balls]
For a mould I use a piece of plastic drain pipe, 75mm dia, 30mm deep----------4 of.
Roll out some pastry and cut with an oversized bowl. Feed into the mould pinching it in. Push in a meat ball. Dampen pastry edge and place a piece of rolled pastry over the mould as a lid pinching all around.
Roll rolling pin over the mould to trim off excess pastry. Crimp finished edge with a fork and pierce pie centre for a steam vent, gently push finished pie out of the mould.
Brush with egg/milk mix and bake at 175c for 30 min-ish.

Rusk is made by chopping fresh breadcrumbs in a blender then zapping them in the micro until they are dry .

An added extra i do is to simmer down a fresh chicken carcase for an hour, strain and reduce liquid to approx 750ml, cool then chill at the bottom of the fridge. After 4hrs skim off the fat and u are left with a natural jelly, perfect for adding to the cooked pies, thru the vent.
