what to do with oranges

This year our orange, mandalinas and lemons are heavy with fruit. When I went into the garden today some of the mandalinas were ready to pick but what to do with them, marmalade yes, fresh yes but then what. Went onto the internet for some ideas, useless. So here is what I did and have to say it was excellent.

Made a clafouti batter, (Floyd on France book - loved him) segmented the mandalinas and added chopped almonds. Absolutely excellent.

Trouble is in Uk oranges etc are not really used other than as a fresh fruit or caramilsed so all you cooks experiment and post your recipes.

For those of you that do not know what a mandalina is, it is like a very large orange, the Turks use it green instead of limes but in my opinion nothing like a lime but superb when fully ripe.

I Make Mandarin cake:


170gram flour
140 gram sugar
115 gram butter
1 level teaspoon baking powder
2 large eggs
grated rind and juice 6 mandarin
possibly 1 fluid oz milk if required



1. Pre-heat the oven to 180C. Grease and line a loaf tin.
2. Place all the ingredients except the mandarin juice in a food processor and whizz until smooth. Add 2 tablespoons of the mandarin juice.
3. Pour into prepared tin and bake for 40-45 minutes, until a skewer comes out clean.
4. Whilst baking, prepare the syrup. Dissolve 3 tablespoon of sugar in the juice of the mandarins. Heat until it starts to bubble and then simmer for a few minutes until it becomes a little syrupy.
5. Once the cake is done, remove from oven and stab all over with a skewer. Pour the syrup all over the cake and then leave in the tin until cool. You may like to sprinkle with a little sugar on top.

u can put them in a bucket with little holes... and gently squish them with ur feet to extract orange juice!

..squeeze the oranges and make loads of ice lollies (calypo,s).or slice loads and freeze them for drinks ....i do that with lemons for the wifes gin and tonics.. saves using ice..

Why not make madilin wine out of them.
l remember making orange wine and "Boy" after one glass l was singing on the streets
