Cheat soup

Got a hankering for cream of tomato soup so i looked up some recipes, all heavy on the flour and cream so i did a cheat version, strewth it came out really good without cream. If you like the tinned soup try this its soupoib!

Creamy Tomato soup recipe.

4 bowl batch

1k fresh toms, peeled ,de-seeded and chopped
˝ medium onion chopped
2 cloves garlic chopped
Chicken stock cube
1 tablespoon tomato paste
Tomato soup powder
Milk
2 lumps sugar
Seasoning and herbs

Gently sauté the onions in a little oil for 5 mins, adding the garlic after 4 mins
Add the toms and cook for a further 5 mins
Add a mug of water, tomato paste, sugar, stock cube, seasonings and your choice of herbs
Simmer for 20 mins then stick blend to a smooth consistency, then back on to simmer
In a bowl add a mug of semi milk and blend in a half pack of tomato soup powder
Add slowly to soup whisking in.
Bring to the boil then remove from heat.
This will be a thick soup so adjust to your liking with more milk
Adjust seasoning .
[don’t omit the sugar as it balances the acidity of the toms]

Were lucky here in marmaris, many of our import shops sell heinz tomato soups and campbells condensed soups too.

I make tomato soup the same way but don't add tomato soup powder and use a whole onion, I don't soften the onion just chuck the whole lot in a pan. When cooked I put in the food processor and it always comes out thick and I add the milk once the soup has been in the processor.

Another good soup is "garbage soup" using left over veg, either fresh or already cooked. If using cooked veg just put this in a pan with water and stock cube and simmer and then put in food processor. If using fresh veg, again put all together in a pan with stock cube and water and simmer until soft and then in the food processor.

Nice recipe Mollag thanks, I'll give it a try but I might add the cream back in lol! I think I'll also throw in a good few basil leafs, lovely in most things with tomato's.

Hi, There is one just as you come in to marmaris (from Dalaman road) as you enter the town it,s on the right hand side before the 1st roundabout, called engin pazarlama, before the Bim shop. Another one is as you come into Marmaris again from dalaman road, as you come in to town, take a right just before Tansas, follow the road , up thru the roundabout and the shop is just on the left, they have sausage bacon gammon etc plus lots of other goodies. Hope you find them .
