Apricot Jam - a gem of a recipe

With fresh apricots about to make a comeback I would like to share this recipe I picked up along the way somewhere. It is the most beautiful intense apricot jam I have ever tasted and everyone who has tried it has loved it.

2lb/1kg Fresh apricots
3 cups/750g Sugar (I have used 500g and still been successful)
squeeze of fresh lemon juice

Cut the apricots in half, remove stones and place in a large saucepan.
Heat gently and as the fruit gets hot stir in the sugar gradually. Squeeze the lemon juice over the fruit and slowly boil for around 20 mins.

Test for setting on a cold saucer and then bottle in a sterilized jar(s).

I have used less sugar and it could affect the storing of the jam but to be honest it doesn't last long enough and visitors take it back to the UK with them. I do store mine in the fridge.

thats sounds good..i love apricot jam but with a tang and most of the you buy are too sweet
have you tried the recelyap from Dr Oetker.it is so easy to use and gives a good setting consistency

I use this same recipe but with one addition.
If you've got time to crack about a third or half of the stones, add the kernals to the mix when boiling.
Doesn't change the taste but it looks lovely when it's potted up. I do the same with plum jam, it's delicious.
