Cornflake Tart

My daughter is coming round today to cook, Curried Mutton, Rice and Peas and fried Chicken with steamed veg...........................Im so looking forward to eating later.
I'm on Pudding duty, todays special is School Days Cornflake Tart with Custard, my kids go crazy for this.
(I can post the recipe if anyone is interested)
My niece even drives over from the other side of the city to collect her portion, Cornflake Tart must be going through a revival!!!!!

Line any small square tin with sweet short crust pastry, I use a 7 inch one, smoother the pastry with raspberry jam.

On a low heat add 50grm butter, 50 gram caster sugar and about 50 ml golden syrup, sorry I don't use a recipe so these are all eye measurements but they work for me.
Add around 80 grm of cornflakes, stir until all the flakes are coated and pour over the jam.
Into the oven for around 15 minutes and you should have a golden brown cornflake tart, serve with lashings of custard, but watch out...................it's very moorish.

Top Cheat..............Buy ready rolled pastry, saves loads of time.

I tend to keep the portion sizes small because its so sweet and it also keeps em coming back for more!

Is there a difference between sweet short crust pastry - and regular short crust pastry? Have never ever seen a sweet one you could buy ready made and just wondered if I could get away with the regular short crust pastry?

There is a slight difference, but another cheat.............if you can't find sweet shortcrust pastry, just sprinkle icing sugar on the ordinary shortcrust.

When your making tarts, the pastry is rolled very thin anyway, so not much difference.

Super recipe Lara, mouth watering just reading it! Mine would be topped off with cream though because I'm not a custard person.
Sweet shortcrust pastry?
Add 2 tablespoons castor sugar to 250gms flour when rubbing in the fats. Add sufficient milk to make the dough and roll out as normal.
Who cares if it's higher calories, a 'little' bit of what you fancy, does you good!!

Another variation is to add raisins and chopped nuts to the cornflake mixture, I quite like this but my kids think this is taking the biscuit (excuse the pun) and that the original is not to be messed with.
