Receipe for Banana Loaf

I often make this as it uses up over ripe banana's which nobody wants and its delicious.

4 oz (100g) butter, softened
6 oz (175g caster sugar)
2 eggs, beaten
2 ripe bananas, mashed (if using the small Turkish bananas use 3)
8 oz (225g plain flour)
1 level teaspoon baking powder
1 level teaspoon bicarbonate of sold
2 level tablespoons boiling milk

Heat the oven to 180c, 350f, gas 4 and grease and line a 2lb loaf tin with greased greaseproof paper.

Cream the butter and sugar until light and fluffy and beat in the eggs and mashed bananas.

Sift the flour and baking powder into the mixture and stir the bicarb of soda into the boiling milk. Fold both into the creamed mixture. Turn into the tin and bake in the centre of the oven for about 1 hour or until well risen and golden brown. Turn out and leave to cool on a wire rack with the paper removed.

Eat either as it is or spread with butter.

I really don't think it would, as it's not like a carrot cake, more of a tea loaf.

Sharon, I have a recipe for "Banana Cupcakes" that are topped with a cream cheese frosting, a drizzle of caramel and a grating of dark chocolate so I think that sounds perfect.

thanks for that i love banana loaf too although my dog usually eats the overipe bananas, carrot peelings and bendy carrots (his favourite) and any other fruit and veg & salad he's not partial to spinach though sam
