Arrow Rice Pudding

I realise I may be teaching Granny to suck eggs here but thought it may be helpful to somebody?

Serves 4

Ingredients:
150g Rice (I use "Baldo Pirinc" in Turkey)
1.5 litres of full cream milk
60g Sugar (you may wish to add more to the end result)
Large handful of sultanas
1 teaspoon of good vanilla extract
4 small knobs of butter
Ground nutmeg

Method:
Take an ovenproof dish that's deep/big enough to hold 1.5 litres of liquid without sloshing everywhere...trust me, been there! Add the rice, sugar and sultanas to the dish, pour in the milk and vanilla.

Top with the knobs of butter as much of a sprinkling of nutmeg as you like (if at all).

Cover with lid or foil and cook on the middle shelf at 160C for 1 hour 30 minutes. Remove the lid/foil 20 minutes before the end of cooking, give a good stir and allow the top to brown.

I adore rice pudding and love it with raisins in, looks totally scrummy.
Top toasted in the oven, flip me takes me back to the days when my granny had one in the rayburn ready for us coming home from school, those were the days when everything was homemade and scrumptious.
I adore milk puddings (ass to prove it) I love rice, tapioca, semolina, cornflour, home made custard, love them all, real and total comfort food.
Just the ticket for cold evenings, actually ideal for tonight, however the picture whilst so graphic and appealing won't let me eat the blasted thing.

I've not seen vanilla extract, but I use the little packets of vanilla powder - Şekerli Vanilin. Nutmegs I buy from the spice man on my local market, not sure of the Turkish name.
