Ultra simple cake recipe needed

I need a fairy cake recipe for my elderly mum who has been losing too much weight because she has ulcerative colitis and therefore malabsorption. The doctor told her she needs to increase her calories but she cannot tolerate many types of foods with roughage ie no nuts, brown bread, anything that contains too much fibre.
Also she has a bad back and can't stand for long so i said I'd bake for her when I come home at Christmas.
What I need is a fairy cake recipe that is very simple! Could you also tell me roughly how many cakes the amount in the recipe would produce as I don't eat cakes and she lives alone and can't eat the lot in one go! Thanks

You can also freeze sponge cakes if you make too many they come out very nice when theyve been de frosted .

have a look online for the microwave chocolate sponge that you make in a mug--very simple and you only need make one at a time--or you could try her with baked egg custard--eggs milk sugar mixed and baked in a dish in the oven for about 30 minutes --very easy

Thanks ladies I like the Posh recipe because it doesnt need a long time in the oven and what with rising fuel costs in the UK, mum wants to save on that. Also 30 would last her ages and as you say we can freeze them and I guess defrost in the microwave?

Here is a no-bake cake that is gorgeous. Named after the Canadian town it was invented in (leave out the nuts if you like):

Servings 16

Original Recipe Yield1 - 8x8 inch pan

Ingredients

115g unsalted butter, softened
50g cup white sugar
25g unsweetened cocoa powder
1 egg, beaten
145g cups graham cracker crumbs
75g flaked coconut
50g finely chopped almonds (optional)

115g unsalted butter, softened
45ml heavy cream
15g custard powder
240g confectioners' sugar

112g semisweet baking chocolate
10g butter

Directions
1. In the top of a double boiler, combine butter, white sugar and cocoa powder. Stir occasionally until melted and smooth. Beat in the egg, stirring until thick, 2 to 3 minutes. Remove from heat and mix in the graham cracker crumbs, coconut and almonds (if you like). Press into the bottom of an ungreased 8x8 inch pan.
2. For the middle layer, cream together butter, heavy cream and custard powder until light and fluffy. Mix in the confectioners' sugar until smooth. Spread over the bottom layer in the pan. Chill to set.
3. While the second layer is chilling, melt the semisweet chocolate and 2 teaspoons butter together in the microwave or over low heat. Spread over the chilled bars. Let the chocolate set before cutting into squares.

dead easy Nigella recipe....

190 C / 375 F / gas mark 5

130g softened butter
whisked with
130g sugar

whisk 2 eggs and
1 teaspoon vanilla essence in a bowl

mix into butter and sugar

130g self raising flour
mix in half the flour, then fold in other half

add 4 tablespoons milk

put into 12 cup cake cases

cook for 25 mins

If she has ulcerative colitus then shouldnt she be on a gluten free diet? And lactose free produce. Look on the ulcerative colitus forum so much info on there. Ann

You are right but she likes milk and cheese and is totally useless on the internet no matter how much I've coached her
She doesn't seem to be able to put on weight no matter what she eats she says, but when I quiz her closely about her day's intake, it really isn't very much. I 'forced' her to eat chocolate and chips for three days and she put on a pound so it's down to calorie intake here.
And since dad died in 2000 she hasn't been the same. She lives alone and isn't interested in food at all

If you are looking for a very high calorie cake, I made some the other day and they were 525 cals per cake. Even if you just made the sponge and forgot about the frosting they will still be quite high because butter is used. They look elaberate but are very easy to make and the sponge is delicious and moist.



To make the sponge you will need,

150ml pot natural yogurt
3 eggs , beaten
1 tsp vanilla extract
175g golden caster sugar
140g self-raising flour
1 tsp baking powder
100g ground almonds
175g unsalted butter , melted

Method

1.Line a 12-hole muffin tin with paper cases and heat oven to 190C/fan 170C/gas 5. In a jug, mix the yogurt, eggs and vanilla extract. Put the dry ingredients, plus a pinch of salt, into a large bowl and make a well in the middle.
2.Add the yogurty mix and melted butter, and quickly fold in with a spatula or metal spoon - don't overwork it. Spoon into the cases (they will be quite full) and bake for 18-20 mins or until golden, risen and springy to the touch. Cool for a few mins, then lift the cakes onto a wire rack to cool completely. Keep in an airtight container for up to 3 days or freeze as soon as possible.

This recipe will make 12 large cup cakes or 20 small fairy cakes.

If you can't get vanilla, it can be left out and the ground almonds can be replaced with coconut.

Sharon and Eric - wow! So beautiful! Mum can't have ground nuts or any nuts and the buttercream is too rich for her and makes her sick. Would the recipe still work if I missed out the ground almonds?
