Easy No Bake Cheesecake

225g either digestive or ginger biscuits
110g melted unsalted butter
300g full fat soft cheese (I use philly)
Zest and juice of 1 lemon
Zest and juice of 2 limes ( if no limes then just use 3 lemons)
200ml Double cream
115g caster sugar


1. After crumbling biscuits combine with melted butter and press firmly into a 25cm loose bottom cake tin.
Don't worry too much about the size of the tin but do make sure its a loose botttom one.

2. Place Cheese, Sugar, lemon/Lime juice and zest in a bowl and mix well. Remember to leave a little zest to decorate the top of the cake.

3. In a seperate bowl beat the cream until stiff then fold into the cheese mixture.


4 Pour onto the base and smoth the top, add the zest or crumbled chocolate and chill for 24 hours.

I've never been able to chill this for 24 hours, usually it's gone after about 3 hours and it's always been ok.
