How to stop veg from sprouting?

How do I stop my garlic, onions and potatoes from sprouting?

My garlic has just sent up green shoots and I feel I should be planting them grrr

My onions and potatoes do the same, I have tried keeping them in the fridge, in a dark cool place in daylight no matter what I do they sprout.

Please help me.....x

Re: How to stop veg from sprouting?

Alan used to prep all his veg and store in cold water in the fridge. Onions were peeled and sliced and just frozen in a container about the size of an ice cream tub, ones to be used soon were peeled and sliced and in cold water, same for fresh carrots, works for celery too. Now and again he would peel potatoes for chips and leave in cold water, guess they would keep just as well if they were not chipped.

Re: How to stop veg from sprouting?

Veg loses its vitamins if peeled and stored in water. I just buy a weeks worth at a time from the market, then its always fresh and no sprouting bits! I also store potatoes, onions and garlic in a sack on the kitchen balcony, in a dark corner...this also slows down the sprouting process (yes i know theres probably a word for said process)..!

Re: How to stop veg from sprouting?

onions could be diced or sliced and parboiled for about 1 minute, cooled immediately, then put in the freezer when cold.

garlic bulbs can be separated into cloves and put into a jar and covered with oil.

potatoes i keep in a thick paper bag left loosely open, not closed up, or even a cardboard box with some newspaper at the bottom, then stored i a cool dark place.

Storing garlic in oil is not safe - very high risk of botulism.

i hadn't heard this before, so looked it up. glad of the advice as you are correct, although it can be done for short periods.
maybe best to just store in a cupboard.

To store or not to store garlic cloves in oil? | The Smallest Kitchen

by the way, i also parboil sliced carrots and shredded cabbage then freeze. don't parboil for more than a minute or two, then cool and drain quickly, otherwise they would be too soft.
