How to brew a perfect cup of Turkish tea?

I am using a caydanlik to brew Turkish tea and the first cup comes out pretty good but next cups after 5 or so minutes after tea continues to brew in the top portion of caydanlik it becomes bitter. What to do? and in general what is the correct way to brew turkish tea

I was always taught to wash the tea in cold water pefore putting it in the pot, you should also keep topping up the top part with the boiling water from the bottom. Never had a problem with the tea going bitter.

I notice in the cafe's they let the top part go strong, and then when they serve you they treat it like an espresso - put a tiny bit in the cup and top it up with fresh hot water.

I agree with Number6 - I was taught exactly the same! and it's kept on an extremely low heat. I use a mix of black tea and Earl Grey.

My MiL never washes the tea leaves. She put tea in the top jug and then fills it with boiling water and stirs, the bottom part is also filled with boiling water. It's left on a very low heat as said before, and left for about 10-15 minutes. She will then pour about half a tea glass with the small jug containing the tea, depending on how strong people like it, and then tops it up with the bottom one to dilute it. The top part usually gets topped up again. She seem to use any old tea but will always put a half a small teaspoon of bergamot

It's also a good idea to put one of those small mesh strainers inside the top jug that fit's into the spout to keep the tea leaves in the pot.

Our neighbour Ozan taught us to brew tea exactly the same as Suzyq, even down to the bergamot ( but he does like us to bring him earl grey to use)
We find that this way anyone can have cay to their individual taste.

cay in top pot - boiling water added to both and one one sugar lump in the top pot - very low heat - pour a little from top pot and top up from bottom pot to taste - top up the top pot with additional hot water if it starts to get to strong.

Any thoughts on whether porcelain top is better than stainless steel? There are people who swear that porcelain top makes tea taste a whole lot better.

Ozan our neighbour always uses a porcelain top pot, as you say for preference of taste.

Try putting 1 clove in the top pot, gives extra flavour.
