Citrus & Root Ginger marmalade

A friend brings me citrus fruits from his own trees because he knows I make marmalade, not only for myself, but to sell at the monthly table-top sales. It all helps to feed the street cats around our office.

He misses the Ginger marmalade that he used to buy in Britain so I thought I'd improvise and substute 1/2 the fruit in my regular orange & lemon marmalade, with root ginger. The result was really good, enough ginger to give it a bite, not too much to overpower the citrus.

Yield: 4 x 500 gms + 2 x 250 gm jars.

You will need, 4 good sized lemons, 6 large oranges, 450gms fresh root ginger, 2kilo sugar, 1.5 litre water (approx) and a thick-based jam-pan.

1) Peel citrus fruits thinly with veg' peeler, cut into fine shreds and place in pan.
2) Squeeze juice from fruit and add to pan
3) Peel the root ginger, throw away the peel
4) Grate 1/2 the ginger, chop other half into small cubes, add both to the pan.
5) Place citrus shells and pips in muslin bag, add to pan
6) Add 1.5 litres boiling water, bring to the boil whilst stirring. Turn heat down lower and cook till 'setting point'.
7) Allow to stand 45 mins, stir each 15 mins to evenly distribute shreds and ginger.
8) Pot in sterilised jars.

Enjoy on good wholemeal or full wheat toast.

We love ginger marmalade and use a similar recipe. However its also eliminates the need for juicing loads of oranges as you boil them whole!
The ginger variation is at the end of the recipe.
Also, provided you have a big enough pan theres no need to do the recipe in two halves.

Does this have anything at all to do with Ginger Marmalade??

Don't you just hate it when someone hijacks your thread to try and make a quick buck? Spices are readilly available Turkey at all times of the year and I certainly don't need to import root ginger to produce marmalades etc.

Rant over, back to the kitchen!
