Can anyone tell me what type of sugar (name) is needed to make jam - the type with setting agent in it? Many thanks, Helen

Hello Helen, I make masses of marmalades but never use pectin or any other setting agents.
Fruit, water as required and granulated sugar, comes out lovely and is very popular at our table tops.

I use the usual granulated sugar for jams too, no need for special sugar.

Add the juice of half a lemon instead of pectin, works just the same.

she said she bought it in Turkey last year - sugar with setting agent (pectin I suppose) for jam making ..... doesn't sound as if she really needs it?
