You could get Lynsey to make you a Beetroot cake Martin. Use the recipe for carrot cake but substitute the carrot with Beetroot. Our great grandkids love it, Sophia calls it strawberry cake. It makes a nice moist cake just like the carrot cake, it keeps well. The kids like it with icing on, I prefer it plain with a spoon full of plain yoghurt on it.
