Celery soup

Can anyone tell me how to make soup from the stuff everyone here keeps telling me is celery and clearly isnt please? I'm assuming its actually celeriac, I look at it and dont have a clue what to do with it but I soooo love celery soup. I've looked online at some recipes and all also use potatoes and some also cream, I cant use either of these ingredients.

use the stalks from the Celeriac, sweat in some butter with carrots ,potatoes ,onion, parsley,add some plain flour ,then add chicken stock,boil for about 40 minutes ,put in blender ,then serve with some chopped parsley and cream..

Just use the chopped celerıac,water and lots of chıcken or veg stock cubes,.I,ve also added grated carrot ,onıon and lentıls and stıll got a nıce celery flavour but of course not as rıch as usıng cream would be.

İf you can't use cream or potatoes can you use rice and yogurt. The rice will thicken like potatoes and the yogurt will make it thicker and creamy.

Cant use rice BB but can use bulgur and yoghurts fine.

For celery soup use ONLY onions , chopped upper leaves & stalks of celeriac & peel the bulbous root, diced then sauté in some vegetable oil some diced potatoes herbs of your choice add sufficient stock when vegetables are al dente .. Allow to come to boil simmer for 20 minutes then blitz with hand blender!! Serve with crusty bread or better still garlic bread or any bread products chopped into inch squares with chopped garlic on a baking tray sprinkled with olive oil!! Delish !!

Ps if you like once dished up add a swirl of thin yoghurt or cream for effect & an added dimension ..

certainly sounds delish Duke but cant use potatoes or cream and only brown bread......

hijo is right. If you cannot thicken with potatoes, sweat all other ingredients in butter until nicely soft, take off the heat and add some plain flour. Then gradually add water and some stock to taste, then put in food processor and then the soup will come out nice a think. Job done, problem yok !!

I use corn starch as thickener, works well instead of potatoes.
