Salads

Been this afternoon to an extended family Barbecue at my sister in law's. I asked her what could I bring and she said 'oh some sort of salad'.
Knowing she would already have the usual coleslaw, pasta, rice green salads etc., tried to come up with something different. So I made a pea and cheddar (cubed) cheese salad. Includes chopped celery, shallots, yellow and red peppers, a few dashes of Tabasco and some mayonnaise ( only a little, not swamped) laid on a bed of various lettuce leaves.
So now we are in the summer season would love some ideas for more unusual salads?
Had to come home early after a game of Rounders where I was Backstop. Not feeling great.

Ah yes, the BBQ season has well and truly begun. I always struggle to come up with new ideas for side dishes; your salad sounds delicious, I'll definitely give it a try.

Over the weekend I made a Turkish kasik salad (spoon salad), basically you chop everything up into tiny pieces - tomatoes, cucumber, green/red peppers, onions, flat leaf parsley and then I add olive oil (we produce our own) and some pomegranate sauce (made by my lovely neighbour). I also made a boring potato salad with spring onions and natural yoghurt and mayo dressing.

My neighbour made a fabulous salad the other day which seemed to consist mostly of sweetcorn and red chilli beans (with peppers, onions and other bits too but she must have used two cans of each at least!). I can't remember what the dressing was but it was olive oil based and it was amazing.

Last night a friend of mine made tomato, mozzarella and aubergine stacks with olive oil and balsamic, this is a delicious side dish for grilled steak.
Another friend oven roasts mixed veggies chopped into cubes - peppers, onions, mushrooms, courgettes, aubergine - first tossing them in oil, garlic, salt/pepper and mixed herbs/ Aleppo pepper.

One of our favourites (live any type of salad) but, for the BBQ is in a long square or Oval platter, slice some beef tomatoes, and lay in the dish, (the tomatoes not you) he he, on top of each tomato place a good slice of Mozzarella cheese, top with Black olives (sliced) and pour generously Balsamic and Olive Oil, sprinkle with sea salt and bnlaxk pepper. So simple but, tasty.

Also love any pasta salads mix together Mayo, tomato paste, a goog glug of olive oil, add sweet corn, and pasta (just a nice all dente), a tin of Tuna Flaked with a fork and mix in, season with blaxk pepper, leave in the fridge, to just before serving, very tasty.

Can you get fennel where you are? If so, I recommend slicing it very finely lengthways and marinating in orange juice with salt and pepper. Serve chilled. Most refreshing.

HOT SMOKED SALMON.jpg

We enjoy the hairy dieters "Hot smoked salmon with chickpeas and pomegranite kernels" either as a side or a main meal, Its in book 2.
My mother was less than adventurous with salads possibly because of lack of availabillity during and after the war, we may have been served with a couple of lettuce leaves a whole tomato and maybe a couple of sticks of celery or radish.
We on the other hand love our salads although you wouldnt believe that to look at me !

TCJ,

I have to ask a stupid question, I apologise.
I think I can get fennel, can you eat all of it raw? Is there any part which shouldn't be eaten/isn't nice to eat? (I'm thinking of the various ways artichoke can and are prepared).

It sounds very nice, I really want to give it a try too.

Here's the proper recipe which calls for orange flesh as well as the juice. It says slice into rings but I prefer lengthways.

Fennel and orange salad

Ingredients

2 medium fennel bulbs
1½ oranges
½ lemon, juice only
extra virgin olive oil
salt and freshly ground black pepper

Preparation method

Cut off the tops of the fennel bulbs and slice thinly into rings. Place into a large bowl.
Cut away the skin and pith from one orange and slice into circles 1cm/½in thick. Add to the fennel.
Make the salad dressing by mixing the orange juice from half the orange, the lemon juice, an equal amount of olive oil and salt and freshly ground black pepper.
Drizzle over the fennel and orange and serve.
