Three Flour Bread

Whole meal bread
You will need:-
• 1 tsp yeast
• 2tsp salt (put on opposite side of mixer to yeast)
• 2 tsp sugar
• 50g wheat germ
• 50g Rye flour (Ηavdar unu)
• 100g of Wholewheat flour (kepekli unu)
• 250g white flour
• 280ml mixture of water and milk.
• Soaked dried sundried tomatoes (about 12 pieces)
• 4 tsp flax seeds (keten tohumu)
• 4 tsp mixed sunflower and pumpkin seeds

Mix in mixer for about 5 mins (in 3 stints so as not to burn out motor)
Leave to rise (longer in winter than summer) (roughly 2hrs)
Roll out to fit in bread tins (Note tip here: cut into 4 sections and turn them round 90 degrees before putting in tin don't know why this works but it stops the bread crumbling when you butter it later)
Let it rise again
Put in over preheated to 190 degrees C for 40 mins

Thanks Ibrahim , does Turkey sell strong plain flour.... my fave for baking in the UK , usually get Canadian Strong...

I have not seen it, but we are in a small town in the middle of nowhere. Sometimes we are given organic flour from friends who grow it, but mostly we make do with standard supermarket stuff. We dry our own tomatoes but these can be omitted.
