Golden Syrup Substitute

I have been looking for Golden Syrup (in Turkey) without success. I see that you can substitute honey, maple syrup or corn syrup. Honey and maple are getting expensive.

I have found Glikoz Şurubu (Mısır Şurubu) Glocose Syrup:

https://urun.gittigidiyor.com/kozmet...1-kg-311716998

which is cheap enough. But am I on the right track? Is this the food grade substitute I need?

If there is a stockist in Turkey of the real Tate and Lyle Golden Syrup, please tell.

Ian

Re: Golden Syrup Substitute

A quick weekend in TRNC would see you right for all your UK products. Some good restaurants there too.

Back in Turkey, I don't know what you need it for, have you tried the Turkish pekmez? it is a kind of sweet syrup made from grapes.

Re: Golden Syrup Substitute

Somewhere on the internet is a recipe for making golden syrup. None of the others offered as substitutes has the same flavour.

Re: Golden Syrup Substitute

As an offshoot of the search I have just discovered Molasses ( Melas ) for the first time.
Not fond of Pekmez.

I was making brandy snaps and using my last tin of Golden Syrup, hence the hunt.

Re: Golden Syrup Substitute

I use it for other things, and like to have a tin in the cupboard. I am not sure about the corn syrup option, and may have to employ smugglers to bring it from UK next year. I may try the honey recipe, but will still want Golden Syrup.

Re: Golden Syrup Substitute

You can order and have it sent here, not sure what the delivery is.
I always get my daughter to bring me some.

Re: Golden Syrup Substitute

The following makes around 250ml

Ingredients:

400g sugar
200ml water
40ml freshly squeezed lemon juice

Method:

Put the sugar and water together in a deep, heavy-based saucepan and swirl the pan to mix them gently. Turn the heat on to medium and bring the mixture to a boil, then add the lemon juice.
When it comes back to the boil again, reduce the heat to low. DO NOT STIR! The mixture now needs to cook for about 45 minutes (without stirring) up to a temperature of 115C, before removing from the heat. Check the temperature with a sugar thermometer or, if you do not have one then you need to judge the readiness based on the consistency and colour: you are looking for something close to runny honey and it should be amber.
Leave to cool then transfer to an airtight jar. The mixture will thicken a great deal further as it cools, but don't worry - if it is still too runny after cooling then you can always reheat and boil it for a little longer. Likewise if it is to thick and almost hard then just add a little more water, reheat and boil until the desired consistency is reached. The longer you cook it for the darker it will become, but if you keep the hob at low heat then you should reach the consistency you need before losing the amber colour.

Whilst cooking you can brush the sugar down and away from the sides of the pan to prevent crystallisation of the sugar, by using a brush dampened with water and brushing it gently around the edges.

The syrup will be ready for use after 1-2 days and can be stored at room temperature for up to a year.
enjoy
