Yes, I mean when making wine from pulp. We were advised (CJJ Berry, First steps in winemaking), to add pectolase to the pulp and leave it for several days, it never worked for us. the wine smelled perfect, but never cleared.

Clean with water first then a mild bleach solution will do it. But be sure to rinse before using again, or any baby sterilising stuff such as Milton or just immediately start another batch, no cleaning required other than your bottles.

A nice cider with a hint of lemon and lime for pre match drinks last night.

Might try a straight apple tonight, I have 40 litres of apple juice arriving tomorrow to convert, might try a hint strawberry this time using strawberry jam.

This last batch is going to fast got it standing in a tub of water in the coolest place I can find bubbling like hell way to hot 38 deg. Do you put the jam in at start of fomenting?

Try a wet towel and blow a fan at it, the jam i will dissolve in the pan with some apple juice, let it cool and put it in at the beginning, im using 4 jars in 20 litres @ 28p a jar, never done it but told it works well, will take a hydrometer reading after I put 15 litres in as I don't want it over 6%, the sugar in the jam will ramp it up so may need to add water. You can use raisins instead of yeast but not sure of the heat tolerances but the greeks and turks have been brewing for centuries

Had a 21 litre mix of Apple and Tropical fruit juice on in the garage during the recent very warm spell, struggled to keep it cool whilst fermenting and was taking a good while to clear so I racked it off into another vessel that I had sanitised the afternoon before, left it a few days and racked it back into the origanal tapped carboy ready to carb and bottle which I did, I left it for 2 weeks carbing and was going to let it settle and clear more in the fridge, just means more careful pouringas the 2 weeks was ending I noticed all bottles had little white spots in, it had got an infection in, trouble is I had started a new batch directly on top of the residual in the tapped carboy which will likely also get infected, I'd poured the first batch down the sink when I thought why not find a friend who can distill the alcohol out, so Ive added a bag of sugar which isnt easy into a brew thats well under way and ideally I need to add another to bring the ABV up, its like putting mintoes in a bottle of coke ! when its done I would hazard a guess it will be about 11%, I had added a litre of full fat vimto for a change of flavour so not sure how it will distill, I will ask my mate to double distill and multiple passes through the charcoal filter, expecting about 5 litres at 40% of clear spirits or 2 1/2 litres of hand sanitiser.
Lesson learned really too many re racks and should have sanitised my first re rack just before I used it rather than 12 hours, I am usually meticulous but totally distracted with builders, architects and landscapers at the moment, need to get my early retired head on !!
