Ezme (or salsa...lol)

Ezme (pulped salad)

1 cucumber
2 mid-sized tomatoes,
2 Tbs mint,
1 pinch of parsley,
3 long green peppers, (optional)
1 small onion, finely diiced
3 garlic cloves, crushed
Ĺ tsp black pepper
1 Tbs red pepper pulp
2 Tbs "sour pomegranate juice" (nar eksisi)
2 Tbs lemon juice
4 Tbs olive oil
salt to taste


Skin the tomatoes, chop them up and place them in a sieve to strain from their juices. ( I dont bother with this step, cause I like the tomatoe juices flowing...) Finely chop each of the rest of the ingredients, mix them up and continue cutting them until they look squashed. Or just zap them in the cuisinart (thatís what I do, but just be careful you donít get carried away and end up making a GaspachoÖ.)

In a separate bowl, combine the olive oil, pepper, sour pomegranate or lemon juice, with the pulped red pepper and pour the mixture over the vegetables. Blend everything together and serve at room temperature.

I have had this with crushed walnuts on top and plenty of pomegranite juice, i usually double the olive oil, lemon juice and nar eksisi (pomegranite juice)

Cause we like dipping our bread in it after it has been sitting for a couple of hours and the juices have all blended......
In fact, I grate an extra tomatoe into this dish.....(juice and all)
