Hi Puma, I've seen this question asked a few times on Holiday Truths. You are fine using the flight only or flight and transfer part of the package. It would be courtesy to tell the reps so they arent waiting around for you and also for them to note it on their records for the return journey (if you arent using the transfer). I havent done this myself, its just what Ive read on forums.

Tonya's right, you can do this no problem, jsut make sure you tell the reps at the airport, or they will be hanging around waiting for you.
with all the late deals available at the moment, its often cheaper to book it this way!!

We have done this a few times now. I.e. booking a package tour from England which includes flights, transfers and hotel accomodation. We have used the hotel as a base,stayed at the hotel at the start and end of the holiday but during the middle part, we have departed to go visiting relatives,etc. The hotel staff seem fine about it but do let them know your intentions. It does mean you won't be around to buy their drinks around the pool,etc but they don't seem to mind.

Let the rep know out of courtesy and also so you don't get reported as missing. We used to do it regularly.

Puma,
Have you seen the link for flight auctions. It looks as if it might give some great bargains. I've not tried it yet, but would be interested to hear from anyone who has.

Everybody else has answered your question apart from : phone the airport 24 hours before your return to check that there has been no change to the flight time.
