Barbecue weather is upon us

Barbecue weather is now upon us in Turkiye, so I thought it would be good to share some barbi recipes:

Izgara Kofte - meatballs grilled on the barbecue, warpped in large lettice leaves which have been sprinked with salt and lots of fresh lemon - simply scrummy!

Halloumi (Hellum) cheese - cubed and skewered with vegetables of your choice. I use green peppers, red onions and tomato. Just brush with olive oil and grill - tasty vegi option

Potatoes, sliced brushed with olive oil, sprinked with salt and grilled - great alternative to jacket spuds or chips

I'm sure there are many more great recipes to share?

yummy..yes the weather has been super today..but even when its cold we love a barbie!
we marinate meat and chicken the night before..in a mix of spices...red pepper,cumin, loads of sumac, black pepper, salt, .oil..not olive oil..it makes the meat taste great.
throw on some big green and red peppers,
also skewered meat, with toms and onions..
its a hard life!

hi...we are new to all theses spices ..can you tell me what cumin & sumac are and can you purchase from most shops?

also please...i do me salad all cut up like the turkish...but...what do they put in it requards a liqiud because there is always some litle juice in theres..thanks

That sounds delicious but I've a really stupid question do you wrap them in the lettuce leaves after you've cooked them?

use the lettuce to pick them up..and also use lettuce like bread if you want ..to pick food up.
Sumak/sumac..is widely available..its a dark brown spice made of tiny granules. with a lemony taste..great in salads.
Cummin/kimyon is the most widelky used of all the spices in turkish cooking.
Red pepper flakes are in different grades..some are very hot..aci..or sweet tatlı.

i chop salad up very fine ..toms, onions,peppers (not deseeded) salatalık..little cucumbers...and the essential parsley..maydonoz..fresh mint..and then squeeze lemon juice and a little oil if you like..the oil is good as it coats everthing so carries the flavour...(and also nar eşki if you can find it....thats a pomegranate molasses..not the vinegar)

and when you do buy spices don2t buy them from the big drums that you see in the markets..if these have been open all day flies can lay their eggs there..!!

Yes just wrap them up once they are cooked - so easy- soooooooo tasty - similar to Yuk Sung Chinese if you've ever had it ? But at the same time it is quite different - same concept though - different textures - Enjoy
