hi greg
heres a recipe for a traditional turkish sausage..very tasty too.

Mumbar are the intestines from sheep sterilised(of course) and then stuffed...just like old fashioned british sausage skins were also from the animal..i think?

4 adet koyun mumbarı, 4 pieces of sheep's intestine
*300 gr. orta yağlı kuzu kıyma, 300 grams of medium fatty lamb mincemeat
* 2 su bardağı bulgur, 2 water glasses of bulgur
* 2 çorba kaşığı domates salçası, 2 soup spoons of tomato paste
* 2 yemek kaşığı pulbiber, 2 teaspoons (not the little ones) of red pepper flakes
yeteri kadar tuz, karabiber ve tarçın, salt black pepper cinnamon to taste
* 1 orta boy ince doğranmış soğan,i medium onion finely chopped
* 10 diş ezilmiş sarımsak, 10 bulbs of crushed garlic
* 2 su bardağı et suyu 2 water glasses of meat juice..as the knorr cubes etc.


method
first really clean the intestine inside and out..then leave the cleansed mumbar to rest for 3 hours in salt water.
mix the mince , bulgur, salca, blackpepper, cinnamon, garlic and knead them by hand for 10 minutes.
then using a funnel put this mixture into the mumbar. then arrange the mumbar in a pressure cooker.
cover with 2 water galsses of meat juice a spoonful of salca a spoonful of red pepper flakes and a little salt.
cook with a low heat for 30 minutes
then serve..as in the picture.
this is a really popular turkish dish..especially in eastern turkey...and with homesick turks everywhere!

heres the turkish recipes.
Mumbarlar iyice yıkanarak tersi çevrilir. Tersi çevrilen mumbarlar tuzla iyice ovularak temizlenir. Temizlenen mumbarlar bir tencerenin içerisinde, tuzlu suda 3 saat dinlendirilir.
Kıyma, bulgur, salça, karabiber, tuz, tarçın, soğan, sarmısak karıştırılarak 10 dakika yoğurulur. Bu harç bir huni yardımı ile mumbara doldurulur ve mumbarlar düdüklü tencereye dizilir. 2 su bardağı etsuyu içine 1 kaşık salça ve bir kaşık pul biber, yeteri kadar tuz konularak sos haline getirilir ve mumbarların üzerine dökülür. Kısık ateşte 30 dakika pişirildikten sonra servise hazır hale getirilir.

should have said you can divde the piece up into individual sausages as we would...i wouldnt know how to do that though!

woo hoo excellent thanks very much will try it out and let you know 17% of my customers are Turkish, so hopefully this will go down really well.

however i might manage toe- in- the- hole ..a great english recipe..you can find it amazons books ''tales and recipes by a famous rectal navigator''..its very interesting.
