The three Ps: pestil, pekmez and palude

Another interesting article from Sarah Croxford in Today's Zaman where she tells us about Pestil, Pekmez and Palude. Must admit that palude is a new one on me.

As we still have some of last year's pekmez left I am going to try her recipe for vişne stewed with pekmez. Sounds delicious.

nice article..but i hate pestil, they eat a lot of it in antakya and as in the article it comes in all shapes and sizes.
We use pekmez mixed with tahin for breakfast and mostly in the winter...you always see them together on the market shelves.
i know an old Turk who collects snow and eats it drenched in pekmez..for strength he says...!!

Yes, Shirley, we have tahin mixed with pekmez for breakfast in the winter too. Chunks of fresh crusty bread dipped into the mix, mmm lovely! Been told it's my turn to tread the grapes this year for the new pekmez batch making in September. God know's what it will taste like once my sweaty size 8's have been in it. Good job it's gets a long boiling to kill the bugs!!

Mum also freezes it it the summer (Not sure if it is mixed with water first) until it is like slush. Sounds a bit like your man and his snow covered pekmez, I like that too.
