Turkish Coffee

Hi forum friends, I want to learn how to make a cup of Turkish coffee. I just bought one of those litte pots that you put on the gas ring, a tin of Turkish coffee and sugar but am not sure of the quantity of coffee to water and the cooking technique - can anyone help? Thanks, Helen

here goes Helen ..the pot you boil it in as im sure you know is called a cezve.
they come in different sizes.
for each person use a heaped teaspoon of coffee grounds and one coffee cup of cold water.heat this slowly till it starts to froth..dont boil it quickly....
then when it froths to the narrow neck of the cezve take it off the heat let it subside then return it again to the heat until it froths again ..do this three time.
then pour a little of the brew into the small cups and return the rest back to the heat to froth once more then pour this into the cups..there should be some froth on the top...you add sugar at the start od brewing up....
turkish coffee is served sade...no sugar
az şekerli little sugar
orta şekerli medium sugar or çok şekerli very sweet
its a ritual ..its offered to the guest from a tray with also a glass of ice cold water...one glass for everybody
i hope ive made it plain..tell me if i havent.

No, you have - thanks very much. I thought it had to come to heat more than once but hadn't realised 3 times. I like mine az sekerli - OK, I am just off to make a cup, will report back shortly ....

use the proper little dinky winky cups..it tastes better..
one cup of cold water to a heaped teaspoon
mind you i like nescafe gold...haha
