Hi Mariaca....its Şirdan..sheerdan
its stomach stuffed with pirinc spices etc and boiled..when we are in Adana yusuf hunts all around for it..you can get it from street sellers..i havent seen it anywhere else.it looks awful.

It sounds awful too... my fiance is originally from Adana but we live in Istanbul. He really miss this dish.

ok..if you can face it for love..heres an easy recipe
this is for 4 people
GEREKLİ MALZEMELER4 Kişilik)
4 adet şırdan 4 stomachs
250 gr. kıyma minced meat
Yarım kilo pirinç uncooked rice
Yarım kilo soğan onion
1 yemek kaşığı biber salçası pepper paste
1 tatlı kaşığı tuz salt
1 tatlı kaşığı karabiber blcak pepper

TEMİZLENİŞİ: İçi temizlenmiş şırdanların önce her iki yüzü de soğuk suyla, sonra sıcak suyla defalarca yıkanır. İyice clean it inside and out in cold water, then clean it again in hot water
temizlendikten sonra bir kaç saat tuzlu ve limonlu suda bekletilir ve yeniden yıkanır. Temizliği oldukça uzun ve zahmetlidir. when its very clean put it in cold water with lemon after a while wash it again.you have to take time trouble to do this cleaning.

YAPIMI:
Soğanlar küçük küçük doğranır. Pirinç, kıyma ve diğer malzemeler eklenerek karıştırılır.
mix the finely chopped onion and other ingredients mince meat etc together.

Malzemeler, şırdanlara el yordamıyla doldurulur. Bütün şırdanlar doldurulduktan sonra tencereye yerleştirilir. 3 su bardağı su ve tuz ilave edilip, 60 dakika pişirilir, üzerine bolca kimyon dökülerek yenir
fill the şirdan well by hand and put them in a large pan.add three glasses of water and add salt. boil for an hour. when they are ready to eat put plenty of cumin on top of them.
well thats a rough translation ..maybe a good butcher would prepare them for you...and you do the rest
if you do then you love him very much.!!

This dish sounds worse and worse - but thank you very much Shirley. Appreciate the translation as well
He`ll have to look for the stomachs himself, and clean it too. When that`s done, we`ll see!
