mezeler from Antakya

As every Turk knows the food from Antakya is the best, the most varied and uses the most spices.
Heres a couple you might enjoy if you like strong flavours.ive tried to add some pics..hope thye download ok
this first one uses Çökelek which is a kind of cheese made from dried yoğurt curds and then blended with different spices..every woman has her own particular mix and nowadays you might be able to get ripe çökelek in some supermarkets ..they are traditionally formed into little cone shapes and well wrapped...this is matured çökelek..they also serve fresh çökelek for breakfast with olive oil poured on top.

Malzemeler:

• 2 domates

• 2 salatalık/ 2 little cucumbers

• 2 yeşil veya kırmızı biber 2 red or green peppers

• 1 soğan 1 onion

• 2 adet küflü çökelek 1 çökelek cone

• 1 kahve fincanı zeytinyağı 1 coffee cup olive oil

• Bir tutam maydanoz a sprinkling of parsley


Yapılışı:

Çökelek, cut the pepers into thin strips the toms big cubes . cucumbers half rounds then add the olive oil and mix them together sprinkle parsley on top


Zahter Salatası

malzemeler:tadımlık 6 kişilik this is also very strong flavour..
* 50 gr. taze zahter fresh lemon tyme
* 1 küçük boy kuru soğan a small onion
* yarım tatlı kaşığı toz kırmızıbiber half desert spoon of red pepper
* 1 kahve fincanı zeytinyağı coffee cup of olive oil
* 1 avuç incecik doğranmış maydanoz handful of chopped parsley
* 2 yemek kaşığı nar ekşisi 2 soup spoons pomegranate molasses
* süslemek için doğranmış yeşil zeytin decorate the top with chopped olives

tarif:
wash the lemon thyme leaves go over them and take off hard stems rinse the leaves again in salt water and then again rinse and drain
cut the onion very finely and mix with the zahter
add the other ingredients and mix together
decorate the top with chopped olives
serve with thin bread

Sound and look good, Shirley. I will pass these onto the chef as I think it is something that he will like. Not sure if we can get the çökelek though.

Em..çökelek is becoming more available this end of Turkey..as is Nar Ekşisi and Defne Sabun...theyve got some really different stuff down there.
