tepsi kebab

this is a speciality of the Hatay....tepsi means tray..so its meat cooked in a tray...takes a bit of time to be authentic..but you can cut corners and it still comes out ok
if you find a butcher from eastern turkey he will mix it for you..and if you have a friendly firin (oven) nearby let them cook it for you...otherwise..here goes
you need lean ground beef..a kilo or two (depending how many people or appetite)
A bunch of parsley
good spoonful of kimiyon (cumin)
fresh black pepper
salt
pul biber..hot red pepper..depends on personal taste how hot..or you can leave it out.
mix all of this together by hand..knead the mixture really well..until its quite pasty.
then pat the mix out into a round tepsi..(if you have a local big oven)..or into a normal oven tray.
top with potato wedges,onion wedges
long green peppers quartered tomatoes
you can be artistic with these..make it look nice.
Then make a nice tomato sauce from tomato puree a knob of hot pepper puree and water...taste to see how it is..then pour over the meat and veg.
next bake it in a medium oven...check to see if the pots are done...takes about 30/ 40 minutes. Serve with a big green salad and fresh lavaş and wash it down with a good ayran....
there you are taste of the east ...afiyet şeker olsun
