Apricot jam

Just made some Apricot jam (my first jam making session), and its delicious. Such an easy recipe:

500g Apricots (washed, stoned and halved)
2 cups of sugar (approx 400g)
1 tbsp lemon juice

Layer fruit and sugar in heavy based pan overnight.

In the morning put a small plate in the freezer(!), then ovet a low heat let the fruit simmer, stirring frequently. Spoon off any scum if it threatens to boil over, but this isnt a necessity.

After about 45 mins when it starts to coat the spoon, pop a dollop on the cold plate from the fridge. Turn it upside down (not over best carpet or new shoes) - if it falls it needs more time, if it doesnt, its done.

Stir in lemon juice, stir for 2 more minutes then leave to cool.

I think i'll do small batches and it should keep in the fridge for a few weeks. I looked into bottling and scared myself that the kids would get botulism if i didnt sterilise it all properly, so decided i'll make it as and when.

Such an easy recipe...will try other fruit next.

Even if you cannot bottle it nothing like freshly prepared home made jam.

Never tried making home made jam this looks lovely and easy to do that one day may get tempted!

Hi Mina,

my grandmother used to make Apricot jam exactly in the same way. But in addition she put a few apricot kernels into each jam bottle. We loved them. I don't remember if she boiled them together with jam, or if she added them afterwords. They are delicious.

Mina we made fig jam this week, we have lots of fig trees around us so went and picked 3 kilos, cooked with 1 kilo of sugar as they were so sweet and lemon juice at the end. Its lovely so maybe another one to try?.. I like the tip about the cold plate will have to try that as the second batch we did I dont think we cooked quite long enough.

The thing with the cold plate is to place a small bit of your jam on the plate, if it is ready it will when pushed to one side crinkle up. You now that it is now ready or set.
