my cooking rice method

i thought i would post this as quite a few people have trouble cooking it successfully including myself until i got an ass. chefs job in a college! i told the chef i could cook everything except rice & he taught me how, so i thought i'd share with you two methods that work for me

basic rice
turkish rice with barley (arpa sehriye)

both of the above use the same ratio of water to rice, it doesn't matter how much rice you use just double the amount of water !

basic rice:

use 1 cup of rice
2 cups of water
pinch of salt

put the rice(i dont rinse it) into pan, add the water and salt, bring to the boil, reduce heat to simmer and simmer uncovered until NEARLY all the water has gone, then turn heat off and cover with a lid.
when the water has gone,use straight away or(i prefer)to rinse rice in colander with cold running water until grains are cool(drain very well). heat in microwave when you wish to use it.

rice with barley(arpa sehriye)

i use about 1 tbsp oil
1 cup rice
handful of barley
2 cups of water
pinch of salt

heat the oil( not too hot) in your rice pan and add the barley to it, it will take about 40 seconds to turn a toasted brown colour, add the rice,salt and water and bring to the boil,turn the heat down and simmer til the water is almost gone, turn heat off and cover with a lid for around 5 to 10 minutes, use straight from the pan or rinse(drain very well) and heat in the microwave later adding a tsp of oil if you wish

thanks..the only rice i can cook ok is Basmati..and its far too expensive here..
i'm useless with Turkish rice it always cooks like pudding so i let the 'boss' cook it
i will give your method a go ..

Thanks Sam, I always do my rice in the microwave, and don't get that stickiness that does sometimes happen if I cook it on the hob.

Shirley, what is the Turkish word for the rice I want to use for say with a currie not a pudding, please.

I do a similar thing to your second option but I put a tea towel over the pan and then put the lid on, this absorbs any condensation and I fond the rice is not sticky. I got this method from the mother in law of one of the first people i met in Turkey

Thanks that's the one I buy Baldo Pirinc, it does sometimes go sticky though.

well.....when i make rice pudding(sorry don't use quantities but would guess at 2 to 3 oz of rice) i use pudding rice enough to cover bottom of dish, couple of tbsps of sugar, good amount of nutmeg and about a pint of milk and a knob of butter (if you like the skin on top) and put it in the oven on gas no.2 or 150c in the centre, stir after 30 mins

total cooking time approx 1 1/2 hrs

Try not to stir it, if you stir rice it releases starch and that is what makes it sticky.
