Well behaved food.

Does any one know why egg and lemon sauce is called terbiyeli (well-behaved) in Turkish. I've searched the internet without success so wondered if all the accumulated knowledge of this forum could come up with an idea

As an uninformed guess could it be that it is relatively easy to make without curdling or separating - unlike hollandaise with which I always struggle. Having never made it I wouldn't know, but terbiyeli kofte certainly looks worth a try.

the meanıng when used wıth food ıs that ıt ıncorporates well ...terbiye doesnt only mean manners its also dressing or a marinde
if you think of the way our words are used the meaning changes according to usage..as an example we use dressing to put on clothes and also for food and also for dressing a wound
