kısır...bulgur salad

kısır ıs a drool worthy salad..really addictive ...healthy
maybe fattening ...ah who cares

once you start you cant leave it alone

and ive found a fail safe easy-peasy recipe

to feed the five thousand

start off with a couple of garlic cloves finely minced
a large onion finely chopped
cook these in a little olive oil

then add a big spoonful of hot pepper paste and a big spoonful of tomato paste and some salt

add two and a half water glasses of hot water and stir over a high heat until the paste has melted

put two water glasses of fine bulgur into a bowl


pour in the hot paste liquid

cover and leave for about 20 minutes


in the meantime

chop spring onions

parsley

fresh mint

skinned and de-seeded chopped toms

and if you want a couple of long green peppers de-seeded and chopped


have a look at the bulgur mix..this should now be swollen and softened

put the bulgur on a large tray or in a big bowl

add a half water glass of olive oil

add a glass of nar ekşisi

mix these into the bulgur

then mix in the chopped veg

thats it

eat it with big lettuce leaves

ps...FİNE bulgur..not the kind thats used for pilav

especially good for summer time quickie. if spice and salt is properly adjusted can be good with beer or raki as well.

If I'm asked to take a dish to a barbecue etc I often make this - it disapears rapidly!!! And yes Shirley, it is fattening because of the bulgar!, and because 1 spoonful is not enough!

I love it too, my neighbour makes it so so yummy she always gives us a big bowl of it, we do eat it with lettuce though, can't be that bad, lol!!

Hi there sounds lovely - one question what is nar eksisi? Great to find recipes we can try when we are in Turkey - like lots of things - turkish tea and efes included - they dont taste the same when you do them at home in UK - maybe its the weather????!!! lol - thx paula

It's pomegranate syrup, excellent with salads and lemon juice, plus loads of other things. It's in all the supermarkets in bottles that are shaped like soy sauce.
