Mücver turkish zuccini fritters

if you like little fritters you will love these..they look something like İndian bahjias although some people make them flatter...and this is a basic recipe but you can make them with other veggies especially grated carrot or cauliflower..anything really

this is an easy really tasty recipe theyre nice as a starter of a snack

1 kg zucchini in Turkey called kabak..a small light green marrow
salt
4 eggs
200 gr flour
150 gr beyaz peynir
1/2 bunch dill
1/2 bunch parsley
1/2 bunch spring onions
1/4 bunch fresh mint
a pinch of baking powder
freshly ground black pepper

sunflower oil to fry is better than olive or corn oil

Grate the kabak add some salt and leave aside for half-an-hour then squeeze the liquid out .
Chop the herbs and onions finely.
Then add the eggs, flour, baking powder and cheese to the grated zucchini and mix.
Add the herbs and shape them into little balls.

Fry till they are golden . either deep fry ...or fry in a pan with plenty of oil and turn them when one side is brown to cook the other side
nice served with thick süzme yoğurt mixed with finely chopped cucumber and fresh mint

Thank you for the receipe. they are a staple in my house. As you say you can try all sorts of variations, though the grated carrot is better sauteed before mixing. You can also bake them if you are worried about the frying/fat content.

I make them all the time, and they are always demanded if I invite friends for dinner. My recipe is slightly different, but I find that everyone has their own version - all yummy!

When Ozan our neighbour in Bodrum makes Mucver he often puts some finely chopped Sucuk into them, it just adds a different twist to them.
