Re: Oven clay pot recipes

If you intend buying the pots, make sure you buy from a specialist shop and that you tell them you want food grade pots. If the pots are not fired to the highest temperature then chemicals will leach into the food (lead).

Here is an article which explains it.

Some "Lead-Free" Pottery Can Still Taint Food

Ian

ps you can´t put them in the dishwasher or use detergent if they are unglazed in part as the pot will absorb chemicals

Re: Oven clay pot recipes

Mollag, I use a Tagine to cook Ottoman style casseroles . They work on a similar principal to the sealed amphora that are popular in Turkey.

Re: Oven clay pot recipes

We have an unglazed pot we bought at our local market. We stick in cubed dana et, goat or chicken, sliced potatoes, onions, other veg. we have lying around, allspice, cinnamon, salt, pepper a good dash of olive oil and just enough water to cover the bottom of the pot. Lid on. Into a 200 degree oven for a couple of hours (non-critical). Good to check it after about 90 mins in case it has too much or too little liquid. I'm sure you could do the same with kofte but I've never tried....
It may well be leaching chemicals at us - we don't use detergent (sometimes soak it overnight) and don't use a decent tea towel on it as the red stuff comes off all over the place!

Re: Oven clay pot recipes

Oh and I just read the article immac linked above - that's about lead in glaze. So, clearly, not going to apply to an unglazed pot.

Re: Oven clay pot recipes

Mollag I like to do a casserole using either lamb or goat neck chops ( filleted and cubed. Brown the meat in frying pan, put into amphora ( or in my case Tagine ) .
Then add three or four small shallots, a couple of crushed cloves garlic, a carrot sliced and either broad beans or green beans ( chopped ) a tablespoon Salca or if in UK tomato purée, lamb or beef stock, a bay leaf. Then cook in oven 150c for two and a half to three hours. Serve with boiled new potatoes ( if in season) or some creamy mash, and choice of green veg, mint sauce.
