Cottage Cheese and Spinach Bake

Cottage cheese mixed with vegetables and baked in the overn makes a pleasant light bake that's good for lunch or a light supper. The flaked almon topping adds a lovely crunchy cotrasting texture but could of course be left off if you want to save a few extra calories.
Serves 2
Calories 245 in each serving or 200 without the almonds
10z packet frozeb spinach thawed, or 450g (1lb) fresh washed, chopped and drained
225g (8oz) cottage cheese
2 teaspoons mild whole seed mustard (optio nal)
Sea salt nd freshly ground black pepper
1 tablespoon finely grated Parmesan cheese
15g (1/2oz) flaked almonds toasted under a moderate grill

Set oven to 190c (350f) gas mark 5
Mix together the spinach, cottage cheese and mustard
Season with salt and pepper
Spoon the mixture into a smll shallow ovenproof dish and sprinkle with Parmesan cheese over the top.
Bake for 30 mins
Sprinkle with the almonds
Serve with a crunchy salad, such as a celery and apple salad or with grilled tomatoes and green beans

NOT SUITABLE FOR FREEZING

MMM I am not a fan of spinach but have a packet of rather expensive organic I need to use up and a tub of cottage cheese. My goodness I even have some flaked almonds. Only thing short is parmesan which I dislike so I will try it with organic mature chedder. Will let you know the verdict. Thanks!!

Sorry if you can't get cottage cheese in Turkey, maybe you can find a substitute. Normal cheese may do instead of Parmesan, that's what cooking is about making the meal to you own taste.
